This vinegar is unfiltered and unpasteurized to preserve the presence of the ?MOTHER?. The Mother is the brownish sediment at the bottom that gives the vinegar a cloudy or web-like appearance when the bottle is shaken. The mother occurs naturally from the apple fermentation and only exists in unpasteurized, unprocessed vinegar.
